I love teaching and my second love is sweets!!! I’ve always baked but, recently, I’ve been baking almost every weekend and sometimes during the week. This week’s baking adventure was lemon shortbread cookies. My husband LOVES lemon shortbread cookies and he has been asking for some for about two months.
Lemon Shortbread Cookie Recipe
- 2 Cups all-purpose flour
- 1/8 teaspoon salt
- 2 Sticks butter (softened)
- 1 cup powdered sugar (3/4 cup and 1/4 cup)
- 2 tablespoons lemon juice
- 1 grated lemon peel (about 1.5 teaspoons)
In a medium size bowl, beat the butter and 3/4 cup powdered sugar. Slowly add the flour, salt, lemon juice and lemon peel. Mix all ingredients until blended.
Roll dough in to 1 inch balls and place on a cookie sheet.
Bake for 20-25 minutes on 300 degrees. (Cookies should be light brown on the bottom.) Cool on cookie sheet for about 5 minutes and then move to a wire rack.
Sprinkle the remaining powdered sugar on the cookies. These cookies are light and refreshing!
